ESTD - 2016

Dionysus Brewing is a craft brewery located in Bakersfield, California. Established in 2016, Dionysus' main focus is brewing wildly unique variations of wild and sour beer. The goal with every batch is to fully understand the culture used in each beer to create something more complex and delicious over and over again.

  1. First craft beer: how old were you, where were you, what was it, and what did you think? “I worked at a brewery since I was 18 years old, so right when I turned 21 I had my first craft beer at Lengthwise Brewing Company. It was their Centennial IPA and after one pint I was blown away!"

  2. Tell us your favorite joke. Anything goes here, it’s your reputation not ours! "It is a bit childish, but I enjoy pointing at someone's shirt, making him or her look at what I'm pointing at, and then flicking their nose when they look down!"

  3. Why sour beer? "It is something different and challenging. Especially where Dionysus is located, sour beer is next to nonexistent. Luckily, I was experimenting at home with sour and wild ales for a few years before jumping into this venture! There is something about the people that make and drink these beers that makes it very cool to be a part of."

  4. What is the one creation you can’t stop thinking about, but just seems too over the top? "That's hard to say. When we think of something over the top, we do it!"

  5. If Lactobacillus, brettanomyces, and pediococcus were super heroes, who would win and why? "For the DBZ fans here, Brettanomyces is Goku, Lactobacillus is Vegeta, and Pediococcus is Piccolo. Goku would win of course. Brett pretty much dominates everything in fermentation, but you can never diminish the presence of lactobacillus or Pediococcus because they both play important roles."

  6. Is there anything we didn't cover that you'd like to share about yourself or the sour program/brewery? "For our sour program, we have a yearly membership that includes some very special beers that are only bottled for members. Last quarter of this year, we will be opening up our 2017 membership so stay tuned for that announcement! All of our sour beers are fermented with our house mixed culture strains. One last thing, #TeamMystic."

  7. Finally, any idea what beers you’ll be showcasing at the event? If so, tell us a little about each of them: 

  • Currently Noir (8.8%) - Our golden sour aged in Pinot Noir French oak barrels with Black Currants.

  • Peach on Through (8%) - Our golden sour aged in Rosa French oak barrels with Peaches, Cinnamon, and Vanilla beans.

  • Super Funkadelic - Our Gose inspired ale brewed with coriander, sea salt, and dry hopped with Mosiac.
